Practical and tasty lemon cookies ❤
Ingredients:
1 cup (tea) wheat flour
2 tablespoons of corn starch
1 cup (tea) of butter
1/3 cup of sugar (or more if you want it sweeter)
2 tablespoons of lemon juice
Zest of 1 lemon
1 pinch of salt
Icing sugar for sprinkling
Way of doing:
In a bowl, sift the flour, starch and salt. In a stand mixer, beat butter and sugar until creamy. Add the lemon juice and zest, beating on low speed, just to combine.
Then add the dry mixture and continue beating on low speed until well combined. Make cylinders with the dough and wrap in parchment paper.
Place in the freezer until frozen. Cut into slices of less than 0.5 cm. Place on a baking sheet (no need to grease) and bake in a preheated oven at 180° until golden brown underneath, about 15 minutes. Let cool slightly and roll in icing sugar.
