Grilled Vegetable Salad
Ingredients
- 1 sliced zucchini
- 1 sliced eggplant
- 1 sliced onion
- 1 sliced carrot
- 4 tablespoons of olive oil
- Salt and black pepper to taste
Sauce
- 1/2 cup of plain yogurt
- 4 tablespoons of orange juice
- 2 tablespoons of vinegar
- 1/2 teaspoon of salt
- 4 tablespoons of olive oil
- 2 tablespoons of parsley
- Black pepper to taste
Preparation mode
Season the vegetables with oil, salt, and pepper. Heat a grill over medium heat and brown the vegetables on both sides. Place on a platter. Pour all the sauce ingredients into a jar with a lid and shake vigorously. Drizzle the salad and serve.
