Risotto

Ingredients:

  • 1/2 chopped onion
  • 3 tablespoons of olive oil
  • 1 cup of arborio rice
  • 1/2 cup of dry white wine
  • 3 cups of boiling water (tea)
  • 2 tablets of vegetable broth
  • 1/2 cup grated parmesan
  • 1 tablespoon of butter
  • Black pepper

Preparation mode

First, bring the water to a boil and dissolve the vegetable tablets in it. After boiling, turn off the heat, separate them and keep next to the pan where the risotto will be prepared.
In another pan, heat the oil and sauté the onion over low heat until translucent. Add the rice and mix well.
Add the white wine, stir and keep on low heat until almost dry.
Then take a ladle of vegetable broth and add it to the rice and mix it always so it doesn’t stick to the bottom. When it is almost dry, repeat the operation always on low heat and always stirring constantly until the vegetable broth runs out and the rice is very soft.
Turn off the heat and add the Parmesan, butter and sprinkle with black pepper. And it’s done!
