Easy and delicious vegetable au gratin with minced meat
Ingredients:
- 1 chayote in cubes
- 1 zucchini, cubed
- 2 carrots in cubes
- 1 diced sweet potato
- 2 cups pumpkin (cubed)
- 1/2 cup chopped parsley (green)
- 4 tablespoons of olive oil
- Salt and black pepper to taste
- 200g grated mozzarella cheese
Meat:
- 2 tablespoons of oil
- 1 chopped onion
- 2 minced garlic cloves
- 500g of minced meat
- 1 diced tomato
- Salt and chopped parsley to taste
Preparation mode:
For the meat, heat a pan with the oil over medium heat, and sauté the onion, garlic and meat until the water is completely dry. Add the tomato, salt, parsley and sauté for 3 minutes. Turn off and set aside. Steam the chayote, zucchini, carrot, sweet potato and pumpkin until al dente. Drain and season with parsley, olive oil, salt and pepper. spread the ground beef on top. Cover with the mozzarella and take it to the medium oven (180º C), preheated, for 15 minutes to brown. Remove and serve immediately.
