Easy-to-make ground beef stuffed potato
Ingredients:
- 6 large potatoes
- 2 tablespoons of butter
- salt to taste
- 200g grated mozzarella cheese for sprinkling
Filling:
- 2 tablespoons of oil
- 500g of minced meat
- 1 chopped onion
- 1 minced garlic clove
- 1 chopped tomato
- 1 cup chopped green olives
- Salt and black pepper to taste
Preparation mode:
Pierce the potatoes with a fork, wrap in aluminum foil and bake in a preheated high oven for 40 minutes or until al dente. Remove, let cool and remove a lid lengthwise. Remove some of the pulp with a spoon, carefully making a hole. Set aside the potatoes. In a pan, place the pulp, butter and salt over low heat, stirring until it forms a puree. Reserve. For the filling, heat a pan with the oil over medium heat and fry the ground beef, onion and garlic until lightly browned. Add the tomato, olives, salt, pepper and sauté for another 3 minutes. Turn off. Take portions of puree and stuffing and divide into the cavities of the potatoes. Place in a refractory, sprinkle with the mozzarella and take it to the medium oven, preheated, for 10 minutes or until fixings. Serve immediately. If desired, serve with lettuce leaves.
