Delicious Eggplant Pizza ?
INGREDIENTS:
- 1 large eggplant
- 1 large chopped tomato
- 1 chopped onion
- 1 minced garlic clove
- Buffalo mozzarella slices (can be normal) or can be grated with parmesan
- Basil, oregano, parsley, olive oil and salt
PREPARATION MODE:
Cut the eggplants into 2cm slices. Place in a bowl with water and salt and leave for about 10 minutes. Drain and dry well with a paper towel.
Place the slices on a baking sheet lined with parchment paper and season with salt, pepper and olive oil. Bake in the oven for about 20 minutes or until cooked through. Remove from oven.
Make a sauce with tomato, onion, garlic, parsley, salt, black pepper, basil. Spread over the eggplant slices.
Place 1 small spoon of ricotta cream on each of them and on top of a slice of mozzarella (I used buffalo). Sprinkle oregano.
Bake for another 15 minutes or until the mozzarella is melted. Ready, now just taste!
