Delicious Sicilian Caponata
INGREDIENTS:
- 5 eggplants, peeled, cut into cubes
- 3 red peppers, cut into cubes
- 3 green peppers, cut into cubes
- 3 yellow peppers, diced
- 2 medium red onions, diced
- 1/2 cup (tea) black raisins
- 1/2 cup (tea) chopped walnuts
- 1/2 cup (tea) stuffed or black olives
- 15 whole garlic cloves
- 10 sprigs of rosemary
- 5 bay leaves
- 10 basil leaves
- 1 chili pepper, seeded, cut into rings
- 1 tablespoon (soup) oregano
- 1 teaspoon ajinomoto
- salt to taste
- 1 cup (tea) olive oil
- 1 cup (tea) corn oil
- 1 lemon juice
- 75 ml of soy sauce
- 75 ml dry white wine or apple cider vinegar
PREPARATION MODE:
